I'm an odd number kinda girl. Sure, one is fun, and a pair is right in certain settings, but if you're going to do a grouping, consider going with three (or five or seven...you get the picture). An odd number gets someone to take a second look...and isn't that the point of design anyway. A pair is your grandmother's grouping go-to...it's time to get odd!
